Scone with Cream & Jam

These sweet scones are delicious and easy to make. Serve with lightly whipped cream and jam. Devonshire tea is the perfect way to relax and enjoy an afternoon when on holiday.

Prep time:   10 minutes
Cook time:   10 minutes
Servings:   approx 10 scones

Ingredients:
2 cups of plain white flour
2 teaspoons baking powder
1/4 cup white sugar
1/8 teaspoon salt
2 tablespoons butter
2/3 cup milk

GLAZE
1 egg lightly beaten
1 tablespoon milk

Directions:
1. Preheat your oven to 220 degrees C
2. Shift dry ingredients in to a large bowl
3. Rub butter into dry ingredients until it looks like fresh breadcrumbs
4. Make a "well" in the centre, add milk and mix quickly to a soft dough
5. Turn out bowl onto lightly floured surface and knead 3 or 4 times
6. Pat out in a square or circle 2cm thick
7. Cut into 8 to 10 scones (use a cookie cutter for round scones)
8. Mix the glaze ingredients and brush the tops of the scones
9. Place on baking paper covered oven tray and place into oven for 8 to 10 minutes until golden brown
