Banana Muffins

Banana muffins are super easy to make. Extra delicious straight from the oven, cut in half and serve with a little butter. For a more decadent muffin add a thick serve of the lemon cream cheese icing on top (like a cupcake).

Prep time:   20 minutes
Cook time:   10 minutes
Servings:   1 dozen

Ingredients:
1 super ripe mashed banana
3Tablespoons melted butter
4Tablespoons sugar
1 egg beaten
1/4 cup milk
1 cup white flour
1/2 cup wholemeal flour
1 1/2 teaspoons baking powder

Lemon Cream Cheese Icing (optional)
60g cream cheese (about 4 tablespoons)
30g butter (about 2 tablespoons)
1 cup icing sugar
1 teaspoon lemon juice
1/2 teaspoon lemon zest

Directions:
Add egg and sugar to the melted butter and beat.
Stir in the mashed banana and milk.
Combine the dry ingredients in a separate bowl then add to wet mix. Just gently mix until there are no lumps...don't over mix!
Spoon into greased muffin tin and bake at 220°C for 10 minutes. Test by stabbing centre of a muffin with a metal skewer or knife, if it comes out clean then it's cooked.

Allow muffins to cool before icing.
Icing is super easy just combine all ingredients and mix well.

      my muffins always turn out dry or just turn out like crap lol.. but after doing your recipe it worked they come out fantastic !!
