Baileys Chocolate Mousse

You can use use any cream style liqueur in this rich chocolate mousse and get great results. Perfect for dinner parties. Serve in martini glasses and garnish with chocolate sauce, whipped cream, chocolate shavings or strawberry on top.

Prep time:   20 minutes
Servings:   6 serves

Ingredients:
250g dark chocolate
1 1/2 cups of cream
3 eggs
1/4 cup Baileys liqueur

Directions:
1. Chop up chocolate and place in a microwave safe bowl (or use double boiler if you have one). Add in 1/4 cup cream and liqueur and microwave for 45 seconds. Stir and then microwave for another 45 seconds. Continue until chocolate is melted. Let stand for about 10 minutes until mixture cools down.

2. Separate eggs. Add egg yolks to the cooled chocolate mixture and mix well. In a clean bowl beat egg whites until stiff.

3. Whisk cream until firm peaks form and then add two heaped tablespoon into chocolate mix and combine.

4. Carefully fold in remaining cream and egg whites into chocolate mix. Pour into serving glasses and refrigerate to set.
