Mince & Pasta Bake

This recipe is delicious and ideal for a family meal served with a salad. Your kids will love it, and I'm sure you will too. My daughter loves to eat the creamy pasta topping. This is suitable for babies 8 months plus, just cut the pasta into manageable pieces if necessary.

Prep time:   10 minutes
Cook time:   30 minutes
Servings:   2 adults & one hungry child

Ingredients:
500g lean beef or lamb mince
1 onion peeled and finely chopped
2 courgettes or seasonal green vegetables, chopped
10 button mushrooms, sliced
400g can tomatoes in juice, chopped
2 Tbsp tomato puree
pinch of herbs (basil etc, optional)
1 Tbsp oil

Topping
1 cup macaroni-style pasta
250g cream cheese
1/2 cup grated cheese

Directions:
1. Add pasta to pot of boiling water and cook until soft, about 12 minutes.

2. While pasta is cooking, heat the oil in a frying pan and brown mince. Add in onion, mushrooms and green vege and cook for 3 minutes. Add rest of ingredients and bring to the boil. Transfer to ovenproof dish.

3. Once cooked, drain pasta well, stir in cream cheese and 1/2 the grated cheese. Spread evenly over the mince mixture and sprinkle on remaining cheese.

4. Bake at 200°C for 15 minutes or until golden brown.
