Hokey Pokey

New Zealanders love hokey pokey. Australians call it honeycomb. It's easy to make and never fails to impress when the baking soda is added. Great to make for the kid's school fete too.

Prep time:   1 minutes
Cook time:   5 minutes
Servings:   more than you'd think

Ingredients:
2 tablespoons Golden Syrup
5 tablespoons White Sugar
1 teaspoon Baking Soda

Directions:
1. Combine sugar and golden syrup in a pot and stir over a low heat until sugar is dissolved
2. Turn up heat and bring to a boil. Remove from heat as soon as mixture boils.
3. Add baking soda. Mixture will froth up at this stage and turn a nice creamy golden colour. Stir quickly to make sure it is all combined and then turn out on to a greased tray.

Break into pieces when set. Looks great if pieces are wrapped in cellophane for your local fundraiser. Make sure you store your hokey pokey in an air tight container if it's not going to be eaten on the day.

      Ive made this a few times but it never sets hard...what am I doing wrong? I might add I live in Queensland and it is high humidity/temps.

      tasty, yummy, easy, fast, great for the whole family.
      The recipe was great for me because I was doing my Science Badge and one of them was make hockey pokey and write up a method. So this was really Great and Helpful.

      really nice first time i made it since school really enjoyed the first batch it was gone with in 5 mins of setting so made another batch but double this time so yummy!!!! the first one i made i put half a tablespoon extra of golden syrup in and its tastes abit better than my double mixture sticking to the recipe
