French Onion Soup

This is an easy and economical soup recipe that is super tasty. Ideal for feeding the family for lunch on a cold winters day.

Prep time:   30 minutes
Cook time:   45 minutes
Servings:   6 people

Ingredients:
12 large Onions
1t sugar
3T Oil
3T Butter
1.5 litres Beef Stock
1T Brandy (optional)
salt and pepper to taste

French stick cut and grated cheese (optional for serving)

Directions:
1. Peel onions, cut in half and then slice thinly. Add your sliced onions to a soup pot with oil, butter and sugar and cook over moderate heat, stirring frequently until onions turn golden brown. This should take about 15 minutes.

2. Add stock to the soup pot and simmer for a further 30 minutes. Add brandy, salt and pepper to taste.

3. I like to slice french stick 1cm into rounds and grill with plenty of cheese on top, then add a round to each bowl...YUM!
